After watermelon is picked, it continues to ripen and build up antioxidants. However, if you chill the melon, it seems to cut this antioxidant build up process short. Your body will be best served if you keep the watermelon on the counter until you are ready to cut it. Of course, after the watermelon is cut, you should store it in the refrigerator for safety reasons.
